    4. Coagulate the soy milk: While the soy milk is still hot, prepare a coagulant. You can use either nigari (a natural mineral salt) or gypsum (a calcium salt) as coagulants. Dissolve the coagulant of your choice in water and gently stir it into the hot soy milk.
